I ended up switching to Wayland 3 or 4 years ago precisely because X11 was so shit about remembering my monitor positions. I had to run an xrandr script every time it booted or otherwise decided to shit itself. Using 2 GPUs didn’t seem like it was thought about in the X11 design.
I did for a couple years. It was progressive and exciting at the time, but was kinda left behind by everything else as other distros started up. Mandrake grabbed me for a couple years, Suse at one point. I did do a Gentoo phase since at one point I would build and sell old machines as software routers with ipchains and Gentoo was a little more structured than just compiling my own kernels to keep it lightweight and fast.
Never used it as a desktop, but Debian has been with me since probably 2003ish, mainly as my email server but it’s the base of every service I run myself. Never saw a point to using anything else, including RHEL. Any time I’ve tried something else, I’ve regretted it and gone back very quickly.
Blue Iris will use pretty Much any cameras including Ubiquiti, has a mobile app for viewing and alerts, and has self hosted AI object recognition using code project. Its entirely off the grid if you want it to be. I know it just saves to folders that you could backup, but it will also do ftp, etc out of the box

Often, ridiculous and onerous procedural security is hiding massively incompetent actual software security or is used to constrain people from discovering security by obscurity holes. Everything I’ve done in government interfacing as a vendor would seem to confirm this, at least back when I was doing it a few years ago. You’d be hard pressed to convince me it’s changed much since.

I don’t get this; a Pi isn’t even in the same conversation as an old rackmount server you can get for free. You couldn’t stuff half the compute, ram and storage into a Pi or a dozen Pis for 10X the cost of grabbing something off eBay for a hundred bucks.
That’s if the Rpi Foundation is deigning to let us peasants even buy them these days.

But you should really keep your stuff inside the VPN and not expose things, it opens up a pile of potential risks that you don’t need to have. You can still use a reverse proxy inside the VPN and use your own DNS server that spits out that internal address to your devices for your various applications. If you absolutely, positively must have something exposed directly, put it on it’s own VLAN and with no access to anything you value.
Oh, I fought with X11 many times over the past three decades (almost) that I’ve used Linux. But as soon as I could push that mess behind me because Wayland did as good or better, I jumped on that horse, let me tell you.
